2010 "Ethereal" Cabernet Sauvignon

We found a few extra cases of this wine buried in our library, cracked one open and rediscovered how great the Cabernet from Cass Vineyard can be. The 2010 vintage started out slow and cool, but that just helped develop amazing complexity of flavors and balance in the bottle. This wine is still just a baby.

 

WINEMAKER NOTES

This unfiltered cabernet sauvignon was barrel fermented and hand racked for twenty-four months in French oak barrels. Its intense nose heralds blackcurrant, red currant, lavender, cola and black cherry followed by mocha-laced layered flavors of dark chocolate, cassis and spice in every glass. Full, round tannins linger on the mid palate, producing a rich, elegant, dry finish. Enjoy now or be rewarded if allowed to cellar for 5 years or more.

 

Ethereal Cabernet Sauvignon compliments medium to sharp cheddar cheeses (like Beecher's Flagship Cheddar), braised short ribs, grilled steaks, prime rib, filet mignon, beef bourguignon,lamb and hearty stews.
